  • carrots - 2 pcs. (large)
  • beets - 2 pcs. (large)
  • egg - 4 pcs.
  • mayonnaise - 250 ml. (about)

4. Put gelatin in a water bath and heat it well. You should get a homogeneous mixture without lumps. In no case do not bring the mixture to a boil, you just need to warm it up.

5. Mix gelatin with sour cream. They say that you can use mayonnaise instead of sour cream. But to be honest, I haven't tried it. The recipe with sour cream also turns out delicious, and not so high-calorie.

And the Master of the Year, the Rooster, is just not a fan of fatty foods, so sour cream will be just right.

6. Let's prepare a suitable form, it is better to take a silicone one. It will be easy to get a chilled salad out of it. If you do not have such a form, then cover the salad bowl with cling film. We begin to form our salad. Put a layer of salmon on the bottom, then herring. Layer with sour cream and gelatin.

7. Then the next layers are eggs, carrots and beets. Salt each layer and layer well with a mixture of sour cream and gelatin.

8. We cover the top layer with cling film and send it to the refrigerator until it cools completely.

6. Put carrots in the next layer. Step back from the edge with beets by two centimeters, and lay out in a separate square. Salt this layer again and spread it with mayonnaise. At the same time, do not grab the edges with beets.

7. Next comes a layer of potatoes. It should also be smaller than the carrot layer. Each time the square gets smaller. Seal this layer through a film, salt and spread with mayonnaise.

8. The next layer is egg, it should also be smaller than potato. Press it lightly again, then salt and spread with mayonnaise.

9. Put a wide and high strip of chopped herring in the very center. In terms of volume, it should take up about 1/3 of the size of all the laid out layers.

10. Roll everything into a roll with a film.

This salad looks very similar to the "Herring under a fur coat." And guests are often deceived about him. It seems that they put a familiar salad on their plate, but it tasted completely different. But in the end, the Grenadier doesn't disappoint any of them. The salad turns out to be the most delicious, and it also deserves to show off on the festive table!

In addition, its color is quite consistent with the requirements that the Fire Rooster dictates to us for the next year.

This salad is as simple as the previous ones. Unfortunately, he does not prepare so often, but in vain. Salad is worth it. It's just that not everyone knows about it. And when they get to know him better, they are already preparing him for the holidays more and more often.


We will need:

  • meat - boiled beef 150 gr.
  • potatoes 250 gr.
  • carrots - 150 gr.
  • pitted prunes - 100 gr.
  • walnuts - 100 gr.
  • raisins - 50 gr.
  • mayonnaise - 150 gr.
  • greenery for decoration
  • salt - to taste

Cooking:

Boil the meat, salt the broth for half an hour until cooked. Cool down. Cut into straws.
Boil vegetables.
Vegetables can be grated on a coarse grater, or cut into small cubes (optional)
Arrange in layers either in a clear salad bowl or on a large platter lined with green lettuce.
The layers are laid out in this order. We spread the potatoes down, then the carrots, then the meat. Lightly salt the layer with potatoes and grease with mayonnaise.

Such a salad will be good at the New Year's holiday. And don't let its spring name fool you. Having given it a New Year's look, and decorating it with impromptu Christmas tree decorations, it will not go unnoticed on the festive table.

We will need:

  • canned saury - 1 can
  • potatoes - 3 pcs.
  • carrots - 2 pcs.
  • eggs - 4 pcs.
  • mayonnaise - to taste

As you can see, the composition of the ingredients couldn't be simpler. Everyone in the kitchen will always have everything you need. Boiled vegetables and eggs, and the rest of the preparation will take no more than 10 minutes.

  • eggs - 2 pcs
  • potatoes - 4-5 pieces
  • carrots - 1 pc (large)
  • onion - 1 pc (small)
  • canned peas - 0.5 cans
  • lemon - 0.5 pcs
  • lettuce leaves or greens - for decoration
  • salt, ground black pepper - to taste
  • vegetable oil for frying
  • vinegar - 1-1.5 tsp each

As you can see, this composition of products is as simple as two or two. You don't even need to buy anything special. All products are quite affordable, and almost everyone has them in the refrigerator. Is that not everyone can have tuna, well, it doesn’t matter. You can buy it without any problems in any store.

Preparing such a salad is also easy, simple and fast enough. Even those who have never cooked anything will cope with its preparation.


Cooking:

1. Grate carrots for Korean carrots. And salt it a little. Try. Carrots should be salty, but not oversalted. Mix and squeeze a little. Pepper on top. Leave for 1 hour so that the carrots are well salted.

2. Cut the onion into half rings.

In 0.5 cups of cold boiled water, add a little vinegar to taste. You can add 1 teaspoon, or 1.5.

If sour foods are contraindicated for you, then just cut the onion into small cubes and fill it with water to release the bitterness.

Leave the onion to marinate for 1 hour.

3. During this time, let's cook potatoes. It must be cleaned, then cut into two halves. Cut each half into elongated triangles - slices, preferably of the same size and thickness. Cut it in such a way that it looks beautiful. When everything is beautifully prepared, then the salad as a whole will look beautiful and appetizing.

4. Pour vegetable oil into a frying pan, and preferably into a cauldron. Warm it up to a bluish haze. And fry the potatoes in it in small portions. Each portion will fry for 10-15 minutes, depending on how thick the potatoes you cut.

In the process of frying, the potatoes should be periodically stirred with a slotted spoon. This is necessary so that it is fried evenly and covered on all sides with a beautiful fried crust.

If desired, peeled potatoes can be boiled first, and then cut and fried.

But I prefer the first option. I find these potatoes to be delicious!

5. In both cases, the fried potatoes must be removed with a slotted spoon, allowed to drain a little oil and then put on paper towels. To prevent excess oil from getting into the salad.

6. Allow the potatoes to cool.

7. Boil eggs, let cool and cut into cubes.

8. Taste carrots. It should be moderately salty. If you suddenly over-salted, then rinse it under cold water, and then fold it into a colander so that the water is glass. In this case, you will need to add a little pepper.

15. Our task is to lay out all the products in such a way as to form a slide, and so that all the ingredients are clearly visible.

16. Squeeze the juice from half a lemon into the juice from the fish. Mix. Drizzle the resulting sauce over the salad.

You can also add mayonnaise to the sauce if you like it. The quantity can be varied. But I'm not a big fan of mayonnaise. Salad without mayonnaise is less high-calorie and very tender, with a pleasant slightly sour taste.

We will need:

  • boiled beef or veal - 350-400 gr
  • raw potatoes - 2-3 pcs
  • eggs - 7 pcs
  • pickled cucumbers - 2 pcs
  • champignon mushrooms, or any other, marinated - 200 gr
  • green peas - 100 gr
  • cheese - 70 gr
  • mayonnaise -6-7 tbsp. spoons
  • garlic - 1 clove
  • salt - to taste
  • sunflower oil - for frying potatoes
  • lettuce, dill, parsley - for decoration
  • ground black pepper - optional and to taste
  • cherry tomatoes -3-4 pieces for decoration

The recipe also uses pancakes. They will need to bake 2-3 pieces.

For pancakes:

  • flour - 2 tbsp. spoons
  • milk - 100 ml
  • egg - 1 pc.
  • sugar - 0.5 tbsp. spoons
  • vegetable oil - 1 teaspoon
  • soda - on the tip of a knife
  • salt - a pinch

As you can see, no chicken. But there are pickled mushrooms, salted cucumbers. And we even baked pancakes especially for the coming Year of the Rooster!

Training:

1. Get the dough for pancakes. Let it stand for 30 minutes so that all the ingredients are combined.

2. Fry 2-3 thin pancakes.

3. Cool the hot pancakes a little, fold in half and roll into a tube. Then cool completely. How cool to cut, how to cut the roll, thin circles. Then the pancake will roll out and you will get long narrow strips.

4. Cucumbers cut into thin strips.

5. You will also need to boil the meat in advance. Boil it over low heat. It is not necessary to salt throughout the entire cooking, so that the salt does not draw out all the delicious juice from the meat. Salt for 10 minutes before the end of cooking. Cool the cooked meat and cut into thin strips.

We try to cut all the ingredients approximately the same in thickness and length. Since we will build a nest from them, it is better to cut them in the form of twigs, that is, straws.

6. Eggs should be boiled and also cooled. Then separate the whites from the yolks. Squirrels cut into thin strips.

7. We also need mushrooms. We use pickled mushrooms. Usually everyone uses champignons, and they are no worse in a salad than the rest. So, we also cut the mushrooms into strips, to match other products.

8. Another important step in preparation is to prepare a blank for the nest itself. And we'll build a nest out of fried french fries.

To do this, cut raw potatoes into very thin strips. Sometimes it is recommended to grate potatoes for Korean carrots.

9. When the potatoes are cut, they must be fried. To do this, heat the oil in a cauldron or frying pan, and placing the potatoes there in small portions, fry, stirring constantly.

Salad "Capercaillie's Nest" - how to decorate and decorate

To make the salad look most impressive, it is better to spread it on a large flat dish. Then it will look exactly like a nest. Only prettier and brighter. If the real nest is discreet, disguised as tree branches. That is our "nest" - bright, flashy, just right for any holiday!

1. Put lettuce leaves on a large flat dish or plate.

2. Put the ingredients mixed with mayonnaise on the leaves in the form of a small hill. We make a small depression in the center where we will put the eggs.

This salad has one feature that will not be forgotten if you decide to cook it. In the original, it is prepared from chicken fillet. Therefore, we will cook it unconventionally, we will replace chicken with meat, or smoked sausage, or brisket. You can use boiled tongue, or even take a little bit of everything.

We will need:

  • boiled breast 300-400 gr. (unconditionally replace with boiled or smoked meat)
  • boiled potatoes 3-4 pieces
  • boiled carrots 2 pieces (medium)
  • 2 pickled cucumbers
  • half a can of green peas
  • a bunch of green onions
  • bunch of greenery
  • mayonnaise to taste

For pancakes:

We will need:

  • 2 eggs
  • 1 tablespoon sugar
  • salt on the tip of a knife
  • 1/3 teaspoon baking soda
  • 2 tablespoons flour
  • 100 ml. milk
  • 1 clove of garlic

As you can see, the composition of the products is also quite simple. And what a beauty! So take note of this salad, especially if you have never cooked it!

Cooking

Pancakes for Roses:

1. Mix eggs with sugar.

2. Add salt and soda to the flour, mix.

3. Combine flour with a mixture of eggs and sugar.

4. Slowly stir in the milk.

5. Let stand for a while to disperse the lumps.

6. Bake 4 thin pancakes.

7. While the pancakes are warm, grease them on one side with mayonnaise, adding finely chopped garlic to it in advance.

4. Cut carrots, pickled cucumbers, chicken into small cubes. Cut green onions as usual for salad.

5. Lay out everything in layers in this sequence - chicken breast, cucumbers, green peas, carrots, green onions and the remaining potatoes.

6. Salt each layer as needed and to taste, coat with mayonnaise as much as you like, but it’s better not to overdo it, otherwise sometimes they put so much mayonnaise in the salad that the taste of other products is not even felt.

7. Cover with cling film on top and put in the refrigerator for 12 hours. Let it now insist and gain strength.

When you serve the salad on the table, take a large flat plate or dish. Peel off the top film. Place a flat plate on a salad bowl and simply turn over. The next few salads are based on chicken fillet. But do not be tempted, resolutely change it for meat.

Salad "Pomegranate bracelet" with walnut

This is another favorite salad for the holiday. And of course, it is very often cooked on the New Year's table! And this year they will cook it all the more, because it contains pomegranates. Which, both in color and in taste, strongly recommends the upcoming Year of the Rooster!


What do we need for this:

  • chicken fillet - 350 gr. (change to boiled meat)
  • carrots - 3 pieces
  • potatoes - 3 pieces
  • beets - 3 pieces
  • onion - 1 piece
  • egg - 2-3 pieces
  • pomegranate - 1 piece
  • walnuts - 100 gr.
  • mayonnaise - to taste
  • vegetable oil - 1 tbsp. a spoon

Cooking.

1. Pour eggs with cold water, if they are from the refrigerator, let stand for 20-30 minutes. Then add half a tablespoon of salt and boil for 8 minutes. Drain hot water, put under the tap under cold water, let the water run a little. Then pour cold water, and leave the eggs in the water for a while so that they are better cleaned.

2. Boil potatoes and carrots. Potatoes will cook for 30 minutes, carrots a little faster.

3. Beets can also be boiled, but to make it faster, I boiled the beets in the microwave. To do this, pour a glass of water into a special glass container for the microwave. Wash the beets thoroughly, pierce in several places with a fork, put in a container with water, cover with a lid. Put on the "Vegetables" mode for 8-10 minutes. Then turn the beets on the other side, and repeat the procedure.

4. Wash chicken fillet, put in water and boil in salted water for 25-30 minutes. Then take it out, put it on a plate so that the liquid is glassed, and the chicken dries. It will be necessary to remove the skin from the fillet and cut it into thin strips, or you can also cubes. Who likes it better.

5. Finely chop the onion, pour a spoonful of oil into the pan and fry it until golden brown. Then pour half a glass of boiled water, and without reducing the heat, let the water boil, stirring the onion occasionally. Once all the water has boiled off and you see the onions begin to fry again, turn off the gas, cover the onion with a lid, and leave it like that. Water and then a closed lid will help our onions not crunch on our teeth when we eat salad.

6. Pour the nuts into a deep bowl and crush with a crush. You can also grind in a blender, but it will take longer to wash and clean it. The pusher can be used to quickly crush the ceiling, and the size of the resulting crumb can be better controlled. The crumb should not be very small, so that it would be nice to nibble on a nut when it hits your tooth in a salad.

7. When the vegetables have cooled, they must be rubbed on a coarse grater. All in separate bowls. Peel the pomegranate and sort into grains.

8. We do all of the above actions in parallel, and after 50-60 minutes, we have all the ingredients ready. Now we prepare mayonnaise, salt and pepper. As well as a large flat plate and a glass. Everything, now we are ready for creativity, we will create our salad and put into it the most basic component - our Soul!

9. Place an inverted glass in the center of a flat plate. We spread the first layer around it in a circle - chicken (meat). On top of this layer we make a thin mayonnaise mesh. In order for the mesh to be thin, you must first remove the mayonnaise from the refrigerator, it will warm up a little, and will be squeezed out in a thin stream. It is necessary that all layers are saturated with mayonnaise.

10. On top of the meat (chicken) is the next layer - carrots. When you put it out, salt and pepper to taste.

11. Now it's time for nuts. They need to lay out only half, the rest will still be useful to us. Now another layer of mayonnaise. Yes, a mesh would be just right here.

12. Mayonnaise is done. Now lay out the potatoes. It must be salted and peppered to taste. and of course, also grease with mayonnaise.

13. Next, lay out a little less than half of the beets, lightly salt.

This is such a small hello from the summer. For its preparation we use whole pickled mushrooms. For this we take either champignons or mushrooms.

We will need:

  • chicken breast - 1 pc (replace with meat)
  • potatoes - 3 pcs
  • carrots - 1 pc.
  • hard cheese - 150 gr
  • eggs - 2 pcs
  • pickled cucumbers - 3 pcs
  • fresh cucumber - 1 pc.
  • marinated champignons - 1 bank
  • pickled mushrooms - 150 gr
  • mayonnaise - to taste
  • dill - bunch
  • salt - to taste
  • vegetable oil - for greasing the salad bowl


Food preparation:

1. Boil the meat. Then take it out and put it on a plate so that all the juice drains from it.

2. Boil potatoes, carrots and eggs.

3. When the vegetables have cooled, grate potatoes and carrots on a coarse grater.

4. Either grate the eggs too, or cut them into small cubes on an egg cutter.

5. Grate pickled cucumbers for Korean carrots, or cut into very small strips.

6. Cheese also rub on a grater.

7. Cut the meat into medium-sized strips.

8. Finely chop the dill.

9. Put the champignons out of the jar into a colander so that all the water is glassed from them.

1. We choose champignons and form mushrooms directly in the clearing. We spread them with their hats down directly on the film, you can put larger mushrooms in the center, and smaller ones towards the edges. In general, as your fantasy tells you.

2. The next layer we have is greenery, this is the same mushroom clearing.

3. Then cheese, eggs. Salt the eggs lightly and grease this layer with mayonnaise. Who loves more mayonnaise, someone less, so add it to your liking.

4. Now we will go carrots, and then meat. We also grease this layer with mayonnaise.

5. Then add pickled cucumbers and potatoes, which we also salt and grease with mayonnaise.

As you have noticed, we grease the ingredients with mayonnaise through the layer. I do this so that the salad is not too oily. But if you want, you can lubricate each layer with it!

This is the classic version so to speak. But I also add one layer between the carrots and the meat. I make this layer from canned mushrooms, which I collected in the summer in the forest and marinated.

6. If you also have such a cherished jar, then do not regret it, add finely chopped mushrooms to the salad. The taste of the salad will be just amazing. Any mushrooms will do - both porcini, and boletus, and honey mushrooms, and mushrooms. Today I add mushrooms to the salad.

Well, if there is no such jar, it doesn’t matter ... add the remaining champignons, or just skip this layer. In principle, it will be so delicious!

One more nuance. If you are not a fan of mayonnaise, then the layers can be smeared with sour cream. And I like to mix sour cream with mayonnaise in a ratio of 50% to 50%, and grease the layers with such a mixture.

7. We cover the last layer with a film. And put in the refrigerator. Salad should be infused for at least 10 hours.


Instead of champignons, you can use mushrooms and the salad will then acquire a new beautiful look and a completely different taste. But I must tell you that this taste is not worse than the previous one.


Innings:

Before serving, prepare a large flat dish. Beautifully lay out green lettuce leaves on it.

Also, as you know, the Rooster greatly appreciates simplicity and does not spend money in vain. In the composition of the products, everything is the simplest. But this doesn't hurt the salad at all. Ingredients are selected in strict accordance, they are balanced. Everything is perfectly combined, and "Sunflower" is obtained like no other!

We will need:

  • chicken breast - 300 gr (replace with boiled meat)
  • mushrooms - 300 gr
  • onion - 1 pc.
  • eggs - 5 pcs
  • cheese - 150 gr
  • olives - 0.5 cans
  • chips - 0.5 cans
  • mayonnaise - to taste
  • sour cream - to taste
  • vegetable oil - 2-3 tbsp. spoons
  • salt, ground black pepper - to taste


Training:

1. Boil chicken breast (meat) in lightly salted water. Cool, remove the skin if you are using an unfinished fillet, and cut into small cubes or small strips. Whoever wants.

2. The second main component is mushrooms. Today I have forest fresh mushrooms. These salads are the most delicious. In addition, such mushrooms also have a wonderful forest aroma, which is also important.

3. Mushrooms must be cleaned of forest debris. And also clean the leg by scraping it and removing the dark layer. Cut into large pieces. Then fill them with water and put to boil.

As the water boils, note the time and boil lightly with salt for 10 minutes. During this time, remove the foam.

4. Then we throw the mushrooms into a colander and let the water drain.

5. Onion - a small head, also cut into smaller cubes and fry in oil. Pour a couple of tablespoons of oil into the pan first, if not enough, then add another spoon.

6. Fry the onion until slightly golden, do not overcook. And immediately add the mushrooms. Reduce the heat and sauté the onion and mushrooms for 10 more minutes. Place on a flat plate to cool quickly. Then cut into small cubes.

7. Boil eggs until tender. Separate the whites from the yolks. Grate the whites on a coarse grater, and the yolks on the smallest. Try to choose eggs with a bright yolk for salad. Then the salad will look like a real sunflower - bright and colorful!

8. Grate cheese on a coarse or medium grater.

9. Olives cut into two halves. This will be the "seeds" of our sunflower.

10. Prepare mayonnaise and sour cream. You can make a salad only with mayonnaise. I will do 50 to 50, mixing sour cream and mayonnaise. So, the salad will turn out to be less high-calorie and more tasty, because two dressings are always better than one.

11. And finally, chips! The product is not very useful - but art requires sacrifice! To create such a culinary masterpiece - chips are needed. In the end, if you are completely against them, then when you eat, just put them aside. It's easy to make, the chips are not mixed with the salad. We will have such a decor, namely, sunflower petals.

Well, everything is ready, it remains to prepare only a large flat plate or dish. A salad does not fit on a small plate, I warn you right away, pay attention to this!

Cooking:

1. The first bottom layer we have is chicken fillet or meat. But before we put it on a dish, mix it with mayonnaise and sour cream in the bowl in which we have it.

This will allow each piece to soak in the sauce when the salad is infused. If you stir immediately on a dish, it will be ugly, smeared and smeared.

Therefore, we interfere with the meat with sauces on a separate plate, and then carefully lay it out in the dish on which we will serve. Pepper this layer a little to give the salad extra flavor and some piquancy.

2. Put the cooled mushrooms with onions in the next layer. We will not lubricate this layer with anything, it is already lubricated with us - with oil. If there is oil left in the plate on which the mushrooms lay, then it is not necessary to pour it out. Mushrooms and onions have already taken as much oil as they needed.

It is not necessary to press the layers. We spread the ingredients freely, as they fall. The layers will compact themselves while they are soaked, as they need to!

3. Then lay out the grated egg whites. We also grease this layer with sour cream and mayonnaise in equal proportions. Or just mayonnaise, if you are a fan of it.

By the way, you can prepare a mixture of mayonnaise and sour cream in advance by mixing everything in a separate bowl. Stir not too much so that there is no leftover. It's always better to mix in extra.

And it is also very important not to abuse the lubrication. We have salad with mayonnaise, not mayonnaise with salad. Sometimes they put so much mayonnaise in the salad that the taste of nothing else is no longer felt. And the salad almost floats in it. Everything is good when everything is in moderation.

4. Put a layer of grated cheese on the proteins. It will also need to be lightly flavored with dressing.

5. Now, carefully, so as not to wrinkle, lay out the top layer of the egg yolk. Sometimes pickled corn is laid out with this last layer. But in this case, another layer of mayonnaise is applied to the corn.

I prefer the egg yolk, because in this case, additional lubrication can be dispensed with.

We try to distribute the egg yolk so that it covers not only the upper part, but also the side walls.

6. Spread the olives cut into halves in a circle. These are our "seeds" of a sunflower, so we arrange them in the appropriate order. Press down on each half to make sure it stays in place.

And this is our last layer. We will include chips in the salad just before serving. Otherwise, they will soften ahead of time and will not be crispy.

I do not salt any of the lettuce layers. Chicken breast and mushrooms were boiled in salt water. Salt is present in mayonnaise and chips. And in chips it is even more than it should be. I only slightly peppered the layer with chicken meat and that's it.

But I advise you to try the mushroom layer and the layer with chicken meat. If boiled, and there is not enough salt, then the layers should be salted to taste.

7. Put the salad in the refrigerator for at least 2 hours, but 4 hours is better. During this time, the layers will be well saturated with dressing, infuse and cool slightly.

Since we did not press the layers, the salad will turn out tender and airy. Since we did not use a lot of mayonnaise, it will not be fatty and high in calories for us.

It would seem that all these are trifles, but the taste of the dish just depends on these trifles. That is exactly what we are trying so hard for! After all, we are preparing a salad for our most beloved and close people. Therefore, do not neglect the details, they are very important!

8. Before serving the salad on the table, make petals from chips. The salad immediately changed, became so beautiful and inviting! That's all ... We serve it on the table, put the chips on portioned plates, and salad on them. It is best to cut the salad into triangles, as we cut the cake. And we also serve it like a cake. New Year's salad "Santa Claus"

Everyone - both adults and children are waiting for miracles from the New Year. And who can perform these miracles. Of course Santa Claus! Therefore, we will prepare a salad in the form of its image! He will please everyone without exception.

We will need:

  • crab sticks - 200 gr
  • red fish (salted or smoked) - 200 gr
  • rice - 1 cup
  • hard cheese - 100 gr
  • tomatoes - 1 pc.
  • Bulgarian pepper (red) - 1 pc.
  • carrots, peppercorns, dill - for decoration
  • mayonnaise - to taste

Cooking:

1. Boil rice in salted water and cool it.

2. Finely chop the crab sticks. Leave a little for decoration.

3. Cut the tomatoes and red bell pepper into cubes.

4. Forming a figure of Santa Claus on a large flat plate, lay out the first layer of rice. Press lightly with your hands. Leave some rice to decorate the coat.

Spread the layer with mayonnaise.

5. The second layer will be crab meat. Put it on top of the first layer and also lightly press with your hands.

This layer must also be smeared with mayonnaise.

  • olive oil - 60 ml.

Cooking:

1. Let's start by making the sauce. Evaporate the balsamic vinegar in a pan until it reduces in volume by 4 times. Add sugar. Let cool. Add olive oil.

3. In a separate pan, fry seafood in oil along with garlic, rosemary, thyme and dill. Fry for 3-4 minutes, stirring constantly.

5. Put lettuce leaves on a large flat dish. Put seafood on them and pour over the sauce.

  • chicken broth - 2 cups

2. Rinse prunes with water and scald with boiling water, then drain the water. Cut apples into small pieces. Combine with prunes. Add sugar and thyme.

3. Fill duck with stuffing. Fasten with toothpicks. Pierce the skin in several places.

4. Preheat the oven to 190 degrees. Lay the duck breast side down on a baking sheet. Bake for 1-1.5 hours, depending on the size of the duck and the characteristics of the oven.

5. Get the duck. Drain the evaporated fat from the pan. Pour it into a pan, put on fire. Add flour, mix, fry until lightly thickened. Add vodka, stir. Then add broth and jelly.

6. Simmer the gravy over low heat until it thickens.

  • fresh beef tenderloin - 700 gr
  • champignons - 400 gr
  • dry porcini mushrooms -50 gr
  • onion - 1 head (small)
  • puff pastry - 250 gr

  • egg yolk - for brushing

Cooking:

1. Rinse and dry the meat thoroughly. Cut films.

2. Fry in a hot pan until a crust forms.

3. Pour boiling water over dry porcini mushrooms and soak for 15 minutes. Cut mushrooms into small pieces. Drain water from porcini mushrooms and chop them as well.

  • bell pepper - 2 pcs
  • meat broth - 1 cup
  • dry white wine - 1 glass
  • pickled cucumbers - 5-6 pcs
  • mustard - 2-3 tbsp. spoons
  • vegetable oil - 50 ml
  • greens - bunch
  • spices - thyme, rosemary, paprika
  • salt, pepper - to taste

Cooking:

1. Cut the meat so that a rectangular flat layer is obtained. Beat it, salt, season with spices. Rub everything over the surface. Pour the oil into your hands and spread it over the meat.

2. Cut the bacon as thin as possible. Lay it on top of the meat and brush with mustard. Leave for 30 minutes.

3. Boil sausages until tender, cool.

  • hard cheese - 200 gr
  • tomatoes - 2 pcs
  • mayonnaise - 2 tbsp. spoons
  • mustard - 1 tbsp. a spoon
  • salt, pepper - to taste

Cooking:

1. Wash the meat, drain and pat dry with a paper towel.

2. Mix mayonnaise and mustard, salt and pepper.

3. Coat the pork, put in a container, close the lid and refrigerate for 5-6 hours.

If you managed to buy a sturgeon, then your New Year's table will be truly royal. After all, sturgeons used to be served only at royal feasts. Baking sturgeon is not difficult at all, at least not more difficult than any other fish.

  • sturgeon - 3-4 kg
  • cherry tomatoes - 10 pcs
  • cucumbers -2-3 pieces
  • olives - 10-15 pcs
  • cranberries - 0.5 cups
  • lemon - 2 pcs
  • lettuce leaves - 400 gr
  • dry white wine - 150 ml
  • vegetable oil - for lubrication

Cooking:

1. Peel the sturgeon from the insides and rinse thoroughly. Dry with paper towels.

5. Bake for 20 minutes. Then open the foil and bake for another 15-20 minutes until a beautiful golden crust forms.

6. Carefully spread the finished sturgeon on a large flat dish, and decorate with tomatoes, cucumbers, lettuce, olives, cranberries and lemon. And also decorate the head and tail with mayonnaise or sour cream.


Such a baked fish served at the festive table will amaze the imagination of all those present, and certainly will not leave anyone indifferent.

  2. Beat the eggs, add the flour and some chopped olives, mix. Divide the resulting mixture into two parts. Fry two pancakes.
  3. Put the finished omelette on top of the chicken fillet, put a thin cheese stick on the edge, form a roll, secure with toothpicks.
  4. Dip the meat rolls in flour, fry in a frying pan with the addition of vegetable oil under the lid over low heat. After 15 minutes, turn over to the other side.
  5. Cut the finished appetizer into 3 cm thick slices. Use vegetables for decoration.

mini sandwiches

Cook with your favorite ingredients. For example, cover a toast of black bread or a baguette with cream cheese and put caviar on it. Complement this perfect blowing sprig of greenery. You can replace the caviar with a slice of red fish.

Snack rolls

Enjoy popular love and snacks-rolls. They are prepared using pita bread. Place the filling in the sheet pita bread, for example, ham with cheese and herbs or red fish with melted cheese and herbs. In the first version with ham, it is better to fry the rolls in batter so that the hard cheese melts.

Ingredients:

  • Lamb leg - 1 pc.

  • Wine - 200 ml.

  • Olive oil - 100 ml.
  • Rosemary, spices.
  • Parsley greens.

Cooking:

  1. Prepare the lamb. Make a neat incision along the entire length of the bone, cut the flesh, cut the joint of the bones at the joint, remove the bones.
  2. In a small bowl, combine olive oil, zest, lemon juice, pepper. Stir. Process the lamb with the resulting composition, wrap in a film, put in the refrigerator for at least 12 hours.
  3. Peel and mince the garlic. Pour a little vegetable oil into the pan, add garlic, fry until golden brown, and then transfer the contents to a clean container.
  4. Finely chop parsley and rosemary leaves, mix with garlic oil, add your favorite spices.
  5. Put the lamb on the table with the cut up, fill with a mass of herbs, form a roll. Fix the workpiece with kitchen twine, coat with oil.
  6. Pour the wine diluted with water in a ratio of 1 to 1 into a deep baking dish, put the grate on top of the leg of lamb.
  7. Send the meat to an oven preheated to 250 degrees. After ten minutes, lower the temperature to 150 degrees. After two hours, remove the dish, wrap with foil and keep in the oven for another 15 minutes. Ready!

Ingredients:

  • Potato - 8 tubers.
  • Proteins - 2 pcs.
  • Spice mix - 1 tbsp.
  • Vegetable oil.

Cooking:

  1. Peel potatoes. Rinse each tuber thoroughly with water and cut into small slices.
  2. Whisk the egg whites into foam. Mix the protein mass with potatoes, add spices, mix.
  3. Put the spicy potatoes in a greased form, put in the oven for half an hour. Bake at 220 degrees. Once every 5 minutes, open and stir the treat.

"Duck with wine sauce"

Ingredients:

  • Duck - 1 pc.
  • Large apples - 3 pcs.
  • Onions - 4 heads.
  • Wine - 100 ml.
  • Rosemary, ginger.
  • Mix of spices, salt.

Cooking:

  1. Tie the duck with culinary twine so that the wings lie against the sides and the legs come together.
  2. Fill the carcass with sliced ​​apples. Put the stuffed duck in the goose, spread the spices around, pour in the wine.
  3. Send to the oven, preheated to 200 degrees. Bake for 60 minutes, then turn over and cook for another half an hour.

ADVICE! When cooking duck in wine sauce, do not spare spices, as the meat smells like mud. Only herbs and spices can dull this specific aroma.

Rolls with crab meat

The combination of ingredients is unusual, and the taste is amazing!

Ingredients:

  • 300 g spinach;
  • 300 g broccoli;
  • 4 things. chicken fillet;
  • 1 sweet pepper;
  • 170 g crab meat;
  • 100 g cream;
  • 5 g ginger;
  • Olive oil.

Cooking:

  1. Cut the spinach leaves into strips, put in a blender bowl, add water, mix into a homogeneous mass. Spread the mixture on cheesecloth and separate the liquid.
  2. Crab meat carefully grind, salt, pepper, mix.
  3. My broccoli, divide into inflorescences, sweet pepper cut into strips.
  4. We turn to the chicken: we clean the fillet from fat and films, cut into slices.
  5. We combine pepper, spinach, broccoli with crab meat.
  6. We beat off the pieces of chicken fillet, season with spices, spread the filling in a thin layer on each. Roll up and secure with a toothpick.
  7. We put our rolls in a saucepan, pour olive oil, cream, add spices and simmer under the lid for no more than 25 minutes.

Veal with nuts and vegetables


Another great dish that is appropriate on the New Year's table.

Ingredients:

  • Veal - 900 g.
  • Salo - 110 g.
  • Onion - 2 pcs.
  • Oil - 30 g.
  • Cheese - 170 g.
  • Carrot - 2 pcs.
  • Butter - 60 g.
  • Nuts - 160 g.
  • A bunch of parsley.

Cooking:

  1. My veal, dry a little, cut lengthwise, but so that you can open and close like a book. Beat lightly, season evenly with spices, roll into a roll.
  2. Melt butter in a saucepan, then remove from heat to cool to room temperature.
  3. Wash and finely chop the parsley, peel the carrots and place in a saucepan. Fill with water, cook for 20 minutes, cut into strips.
  4. We clean the onion, wash it, finely chop it.
  5. Pour the nuts into a frying pan and heat until a seductive aroma and a ruddy hue appear. Let cool, chop, mix with parsley, onion, carrot, oil. Salt the resulting mixture.
  6. Cut bacon and cheese into small pieces. We unfold the veal and put cheese and lard on it in a checkerboard pattern. Put a lot of vegetables and nuts on top. We wrap, fixing tightly with threads.
  7. Pour oil into a frying pan and heat it up. Sprinkle the roll with spices, place in a pan, fry until golden brown and transfer to a mold. Until fully cooked, bake the meat for 1.5 hours at a temperature of 200 degrees.

Couscous with vegetables

Ingredients:

  • 1 bulb.
  • Carrot.
  • Olive oil.
  • 150 g couscous.
  • 1 sweet pepper.
  • 100 g of champignons.
  • 1 clove of garlic.

Cooking:

  1. Bring the water in a saucepan to a boil, meanwhile chop the onion finely, chop the pepper into strips, chop the garlic, and rub the carrots on a fine grater.
  2. We turn to the champignons: clean and cut into slices.
  3. Pour couscous into a bowl, salt, pour boiling water, cover with a lid. Let it brew for about 15 minutes, then remove the lid and break it to make a crumbly mass.
  4. Add 15 ml of olive oil to the porridge, mix.
  5. Pour the remaining oil into a frying pan, pour carrots, peppers, onions there. After a few minutes, add mushrooms and garlic, mix everything thoroughly.
  6. Simmer the vegetable mixture over low heat until the mushrooms are ready, then put the couscous. After 5 minutes, you can serve the dish on the table.

Imagine what the New Year's table will look like if you serve these dishes to guests in combination with the considered salads and snacks. It remains only to choose the right drink, and wine in this case is beyond competition.

  • Vegetable oil - 150 ml.
  • Baking powder - 1 teaspoon.
  • Candied fruits, walnuts, raisins - 150 g each.
  • Cooking:

    1. Combine the listed ingredients, with the exception of glaze and dried fruits, in a deep bowl and mix. Add candied fruits, ground nuts and raisins, mix until smooth.
    2. Grease a rectangular oblong shape with oil, pour the dough. Send the workpiece to the oven. Bake at 180 degrees for 40 minutes.
    3. Remove the finished cake from the oven, pour over the chocolate icing. Sprinkle with Christmas spices, ginger and cinnamon, if desired.

    In the year of the Rat, everything should be bright and juicy, so fruit skewers will be a wonderful dessert to treat relatives and friends on New Year's Eve. The recipe is very simple.

    1. Take some bananas, apples, kiwi. Cut fruits into pieces: bananas - in circles, kiwi and apples - in cubes
    2. String them alternately on skewers, pour over with liquid honey, sprinkle with coconut flakes.

    If you want to make jelly from several layers, then each must harden in turn. It will take about 5 hours to completely solidify, a lot depends on the quality of the gelatin. You can decorate the jelly with grated chocolate and mint leaves.

    Ingredients:

    • ½ cup flour;
    • 50 g of sugar;
    • 2 proteins;
    • vanillin.

    Cooking:

    1. Beat egg whites with sugar, add vanilla and flour. The end result should be a pancake-like dough. We put it in the refrigerator for 15 minutes.
    2. Preheat the oven to 180 degrees. Take a baking sheet, cover with parchment. Pour the mixture on a baking sheet by a teaspoon and level with a spatula. Each pancake should be about 8 cm in diameter. I recommend not to make more than 4 pieces on a baking sheet. Bake cookies no longer than 5 minutes until browned. Prepare leaflets with predictions in advance.
    3. We take out the baking sheet, wait 10 seconds and turn the cookies over with a spatula. We put a prediction in each blank and fold it in half, pinching the ends.
    4. We hang cookies on a cup to acquire the desired shape.

    ADVICE! If you want to give the cookies a special festive look, you can dip them in chocolate and sprinkle with crushed nuts or coconut.

  • 50 g of powdered sugar;
  • 50 ml of Baileys;
  • 12 pcs. savoiardi cookies;
  • 2 egg whites;
  • 2 tbsp. l. cocoa;
  • Mint.
  • Cooking:

    1. Cooking a cake without baking - tiramisu. Brew coffee, add liqueur and sugar to it, mix well.
    2. Beat egg whites until foamy, beat mascarpone cheese separately.
    3. Gradually add the yolks to the cheese, while whisking with a blender until smooth.
    4. Gradually add the protein mass, mixing with a spatula.
    5. We spread the cheese cream on the bottom of the glass form, dip the cookies in coffee syrup and spread them on the cream layer. There should be three alternating layers. The top, final, should be creamy, which we decorate with cocoa powder. If desired, add fruit to the tiramisu, for example, pineapple.
    6. Place the cake tin in the refrigerator overnight.

    "Pancho with cherries"

    For cream:

    • 650 ml cream 35%;
    • 500 g of condensed milk.

    For ganache:

    • 40 ml cream 20%;
    • 60 g dark chocolate.

    Cooking:

    1. We divide the eggs into yolks and whites, beat the whites until a weak foam appears, gradually add sugar. When the proteins form a stable foam, we can introduce the yolks one at a time, while whisking.
    2. Gradually add flour, mix. You should get a fluffy dough that needs to be laid out in a mold. Line the bottom of the pan with parchment paper first.
    3. We bake a biscuit at 170 degrees for 40 minutes. The optimal diameter is 21 cm.
    4. As soon as the biscuit is cooked, wait until it cools, then take it out of the mold and cut it into two parts. The lower part should be no more than 1.5 cm in height. Cut the other half into small cubes.
    5. Let's move on to cream. Whip cream, add condensed milk, beat again. In the resulting cream, put the biscuit cubes, mix.
    6. We take a bowl, cover it with cling film, spread half of the cream-biscuit mixture. The second layer should consist of cherry berries, the next - biscuit cubes with cream, and so on until our delicious mixture is over.
    7. “Cover” the bowl with the bottom of the biscuit, press it with your hand. We put it in the refrigerator for the whole night.
    8. Before serving, prepare the ganache. We heat the chocolate and cream, but do not boil, mix thoroughly so that the chocolate melts completely, let it cool to room temperature.
    9. In the meantime, chop the nuts, but the pieces should be quite large. We take out the cake from the refrigerator, remove the film, sprinkle with nuts, pour over with ganache. Our cherry pancho is ready!
